Traditionally, Schnitzel is made out of veal or pork but since I don’t like pork I made it with schnitzel-cut chicken breast. I didn’t follow any recipe. I watched a couple of cooking shows before and just incorporated my style on how to make them. I didn’t measure but I did use 1.2 kg of chicken breasts for this batch.
Here are the ingredients I used:
Chicken marinade:
- salt
- pepper
- garlic powder
- baking soda
- 1.2 Kg. chicken breast
Mushroom Gravy:
- 4 King Trumpet Mushrooms, sliced
- butter
- olive oil
- salt & pepper
- garlic powder
- flour
- chicken broth powder
- water
- dried parsley
While I let the chicken marinade for a bit, I’ve cut up some mushrooms for the gravy. I used some King Trumpet Mushrooms. They’re really meaty and it turned out good. It is my 1st time to use this kind of mushroom for gravy. I fried them up with a bit of olive oil and really browned them good. SinceI did not use chicken stock from scratch. I think it will add some flavor to the gravy. I used some chicken broth powder instead and used a bit of butter to make the roux for the gravy. And just eyeballed everything. 😀
I prepared the flour, 2 beaten eggs and bread crumbs for the breading portion of the schnitzels. I normally season the flour and the bread crumbs but since there’ll be some gravy I did not season them anymore. Because the gravy will be really flavorful already and I don’t want to end up with salty schnitzels.
I proceeded to bread all the chicken pieces then pre-heated the frying pan with an inch or 2 of rapeseed oil. Then start frying. I’ve fried them according to the brownness that I prefer.
They are really good so crunchy. Marinating the chicken pieces with some baking soda really help to make tender even if you have to reheat them again and again. Since we ate this for 2 days, I have to store them in the fridge. But they are still really good.
Traditionally, Schnitzel is eaten with a lemon wedge and potatoes (Pommes Frites). But our household is a fusion-ized one 😀 we ate it with some rice and as per request by the Poni he wants some sauerkraut with it.
